Are cast iron cookware sets worth buying?

Yes, for one reason: pieces bought as a set cost meaningfully less than the same pieces bought alone, and a well-chosen set has no filler. A skillet, a second skillet in a different size, a griddle and a Dutch oven will each earn their keep. Skip sets that pad the count with trivets and scrapers to look bigger than they are.

What size cast iron skillet should I buy?

A 10-inch skillet is the right first pan for most households - big enough for three eggs or two chicken breasts, small enough to lift. The 8-inch suits one- and two-person kitchens, and the 12-inch earns its shelf space once you cook for four or more, or bake skillet cornbread and deep-dish pizza.

What is the difference between cast iron cookware and carbon steel cookware?

Both are bare, seasoned metal, but cast iron is thicker and heavier with superior heat retention, while carbon steel is thinner and lighter with faster heat response. Cast iron wins on searing, baking and campfire abuse. Carbon steel wins on sautéing and tossing. Many cooks own both and reach for each on purpose.

Why is cast iron cookware so heavy?

Because it is essentially one thick slab of iron - that mass is the point. Weight stores heat, keeps temperature steady when cold food hits the pan and spreads heat evenly across the cooking surface. A 10-inch skillet runs about five pounds; it is the reason sears brown instead of steam.
